The best thing about our visit is that Master Chef Pankaj reveals the recipe secrets for his version of a "Bombay Chowpatty Beach" style Pau Bhaji. We promise you that it is absolutely delicious. This is very much a privilaged peek into Tifin Box's restaurant kitchen, watching a highly experienced cook making a large quantity of yummy Indian food. This is delicious restaurant quality food; but at affordable Indian street food prices!!! The Pav Bhaji is a special, so it's not on the menu every day - if you're planning a visit to especially taste the Pau Bhaji, then please do phone ahead to make sure it's on the menu on the day that you visit, you can call them on: 07760 900 590 A special thank you to Chef Pankaj, Nipesh & all the Tiffin Box team who very much welcomed us and graciously allowed us a privileged glimpse into their kitchen to do the videoing. This Punjabi Dhaba style place really does remind us of India - can you believe they even have original Indian drinks such as Mazza Slice, Thumbs Up & Limca + Parle-G biscuits & even the seasonal Alphonso (Hapoos) & Kesar Mangos. Tifin Box restaurant is located at: 14 Harrow Place, London E1 7DB Tifin Box's Facebook page: https://www.facebook.com/The.TifinBox/ Pav Bhaji Vegetarian Recipe: A rich tomato & onion gravy with a mix of mashed vegetables. The recipe shown in the video is to serve approximately 40 people (as this is a working commercial kitchen). INGREDIENTS REQUIRED (you can adjust the quantity according to taste & requirements) : * Vegetable Oil (Tel). * Sliced white onion (Dungri). * Tinned plum tomatoes chopped & pureed (Tamata). * Chopped fresh tomato (Tamata). * Finely chopped Garlic (Lasan). * Finely chopped Ginger (Adrak). * A garlic & chilli paste. * Tamarind water (Amli pani). * Pav Bhaji Masala - MDH brand is used here (but any good quality brand such as Mangal, Badshah etc will also do). * Salt (Namak). * Red chilli Powder (Lal Mirchu). * Black pepper powder (Kali Muri). * Tumeric powder (Haldi). * Coriander & cumin powder (Dhania & Jeera). * Garam masala. * Whole cumin seeds (Jeera). * Washed & freshly cut Green Coriander Leaves (Dhania). * The following vegetables were pre-boiled & then mashed: Cauliflower, Tindoora, Cabbage, Carrots, Aubergine, Green Peas & Potatoes. * Chopped red & green capsicum to add at the very end. * Water (Pani). * We suggest that you serve it with soft burger buns (buttered & toasted). * finely chopped or sliced red onion. * & if you like, a wedge of lemon. Can someone tell me what were the 2 veggies he boiled that he mentioned before and after peas? I only understood cabbage cauliflower carrots peas.

This chef is so neat, tidy, organised and methodical. It's a pleasure to watch his precise way of cooking. It may not be street vendor like but still fresh and prepared with love.

I've been in a few kitchens myself and it's always a pleasure, you must have some cheek to gain entry and extract your information, this video is priceless well done. It would have been to much to ask exactly how the vegetable mix was prepared but can probably guess. Please please keep up the good work.
Thank You for your kind comment. It indeed does sometimes takes a lot of effort to get behind the scenes; but these particular guys are very welcoming and open about their recipes and I feel very much like I'm in a friends kitchen here, the Chef Pankaj is a genuinely nice person (he used to run a big restaurant in India). Other places sometimes initially point blank refuse to let me record in their kitchen, so I have to respect that as well. Best wishes.
