Pav Bhaji Vegetarian Recipe: A rich tomato & onion gravy with a mix of mashed vegetables.
The recipe shown in the video is to serve approximately 40 people (as this is a working commercial kitchen).
INGREDIENTS REQUIRED (you can adjust the quantity according to taste & requirements) :
* Vegetable Oil (Tel).
* Sliced white onion (Dungri).
* Tinned plum tomatoes chopped & pureed (Tamata).
* Chopped fresh tomato (Tamata).
* Finely chopped Garlic (Lasan).
* Finely chopped Ginger (Adrak).
* A garlic & chilli paste.
* Tamarind water (Amli pani).
* Pav Bhaji Masala - MDH brand is used here (but any good quality brand such as Mangal, Badshah etc will also do).
* Salt (Namak).
* Red chilli Powder (Lal Mirchu).
* Black pepper powder (Kali Muri).
* Tumeric powder (Haldi).
* Coriander & cumin powder (Dhania & Jeera).
* Garam masala.
* Whole cumin seeds (Jeera).
* Washed & freshly cut Green Coriander Leaves (Dhania).
* The following vegetables were pre-boiled & then mashed: Cauliflower, Tindoora, Cabbage, Carrots, Aubergine, Green Peas & Potatoes.
* Chopped red & green capsicum to add at the very end.
* Water (Pani).
* We suggest that you serve it with soft burger buns (buttered & toasted).
* finely chopped or sliced red onion.
* & if you like, a wedge of lemon.

I've been in a few kitchens myself and it's always a pleasure, you must have some cheek to gain entry and extract your information, this video is priceless well done. It would have been to much to ask exactly how the vegetable mix was prepared but can probably guess. Please please keep up the good work.

It indeed does sometimes takes a lot of effort to get behind the scenes; but these particular guys are very welcoming and open about their recipes and I feel very much like I'm in a friends kitchen here, the Chef Pankaj is a genuinely nice person (he used to run a big restaurant in India).
Other places sometimes initially point blank refuse to let me record in their kitchen, so I have to respect that as well.
